Ingredients

  • 1 cup cottage cheese small curd works best
  • 1/4 cup milk adjust for desired thickness
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp ground cumin
  • 1/4 tsp chili powder
  • 1/4 tsp salt adjust to taste
  • 1/4 tsp black pepper optional
  • 1/2 cup shredded cheddar cheese optional, for extra cheesiness

Instructions
 

  • Place cottage cheese in a high-speed blender or food processor.
  • Blend for 1-2 minutes until smooth. Scrape down the sides as needed.
  • Transfer the blended mixture to a saucepan over medium-low heat.
  • Add garlic powder, onion powder, cumin, chili powder, salt, and black pepper.
  • Stir continuously as the queso thickens, about 3-5 minutes.
  • If using shredded cheddar, stir it in until melted.
  • Adjust thickness by adding more milk as needed.
  • Remove from heat and serve warm with chips, tacos, or veggies.

Notes

For extra spice, add diced jalapeƱos or a dash of hot sauce. Store leftovers in an airtight container and reheat with a splash of milk.
