Ingredients
  

Dry Ingredients

  • 1 cup all-purpose flour
  • 1/2 tsp baking soda
  • 1/4 tsp salt

Wet Ingredients

  • 1/2 cup unsalted butter softened
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar packed
  • 1 egg
  • 1 tsp vanilla extract

Coating & Toppings

  • 1 cup chocolate chips semi-sweet or milk chocolate
  • 1/2 cup creamy peanut butter
  • 1 1/2 cups powdered sugar

Instructions
 

  • Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  • In a bowl, whisk together flour, baking soda, and salt.
  • In a separate bowl, cream together butter, granulated sugar, and brown sugar until light and fluffy.
  • Mix in the egg and vanilla extract.
  • Gradually add the dry ingredients to the wet mixture and mix until just combined.
  • Scoop dough onto prepared baking sheet, spacing about 2 inches apart.
  • Bake for 8-10 minutes or until edges are golden brown. Allow cookies to cool completely.
  • Melt chocolate chips and peanut butter together in the microwave in 30-second intervals, stirring in between until smooth.
  • Dip each cookie into the melted chocolate mixture, fully coating them.
  • Place coated cookies in a bowl or bag, add powdered sugar, and toss gently to coat.
  • Let cookies set on a cooling rack before serving. Enjoy!

Notes

For extra crunch, chill cookies in the fridge after coating. Store in an airtight container for up to 5 days or freeze for up to 3 months.
